In the south, chicken is made with buttermilk!
Flour, For Dredging / ingredients from video above
2 cups all purpose flour
1 1/2 teaspoons baking powder
1 teaspoons ground black pepper
1 teaspoon paprika
2 teaspoons salt
Mix - add chicken to flour mixture.
Dredge chicken in flour.
Place chicken on wire rack and let stand for 15 minutes.
Coating needs to set.
Definition of Dredge: To sprinkle lightly/heavy and evenly with sugar or flour. A dredger has holes pierced on the lid to sprinkle evenly. See more Cooking Terms
Oil should be set at 350 degrees to deep fry.
2 1/2 cups of vegatable oil to 12 inch skillet.
Keep warm in a over set at 250 degrees
Line cookie sheet with papertowels.
Place fried chicken on cookie sheet lined with paper towels to keep warm while the rest of the chicken cooks. The paper towels will absorb the excess oil.

Ingredients:
8-10 Boneless/Skinless Chicken Thighs
2 Cups Low Fat Buttermilk
2 Tablespoons Kosher Salt
1 Tablespoons Hungarian Paprika
1 Tablespoon Black Pepper
1 Teaspoon Cayenne Pepper
Flour, For Dredging
Canola Oil, For Frying
