Parmesan-Peppercorn Ranch Salad Dressing
Recipe
INGREDIENTS:
• 1/2 to 3/4 cup buttermilk
• 1/4 to 1/2 cup sour cream
• 2 tablespoons mayonnaise
• 2 tablespoons Parmesan cheese
• 1/2 teaspoon dried parsley; crumbled
• 1/2 teaspoon dried chives
• 1/4 teaspoon dried oregano, crumbled
• 1/4 teaspoon fresh chopped cilantro
• 1/4 teaspoon garlic powder
• 1/4 teaspoon salt
• 1/8 teaspoon black pepper
DIRECTIONS:
Use as salad dressing or dip for raw vegetables.
VARIATION: try other peppercorn colors like pink or green, etc. Try parmesan cheese or leave it out. Optional ingredients could be Fresh Dill, Worcestershire Sauce, Cayenne Pepper, Paprika, Fresh Oregano, Garlic, Tabasco. Substitute yogurt for the mayonnaise to create a lower fat version. We love to add crumbled bacon and chopped chives or even green onions on top of salad dressing- with a bit of fresh shaved parmesan cheese on the side. If we leave out the parmesan in the recipe then we add crumbled blue cheese on the side of the salad.
- Combine all ingredients in a medium bowl, stirring gently with a whisk. For the best flavor, refrigerate, covered, for at least 30 minutes before serving. Dressing can be refrigerated in an airtight container for up to 5 days.
- If using fresh herbs, wash them well and spin them dry or towel dry. Use dressing the same day.
