Sweet Potato Pie is a traditional side dish or dessert in the Southern United States.
Sweet Potato Pie is often served during the American holiday season, especially at Thanksgiving, and is similar in many ways to pumpkin pie. Marshmallows are sometimes added as a topping, but this was adapted more in the Northern United States than in the South.
It is usually made as a large tart in an open pie shell without a top crust. The filling consists of mashed sweet potatoes, milk, sugar and eggs, flavored with spices such as nutmeg. Other possible ingredients include vanilla or banana extracts. The baked custard filling may vary from a light and silky to dense, depending on the recipe's ratio of mashed potato, milk and eggs.

Ingredients
• 3 tablespoons all-purpose flour
• 1 2/3 cups sugar
• 1 cup mashed sweet potatoes
• 2 eggs
• 1/4 cup light corn syrup
• 1/4 teaspoon ground nutmeg
• Pinch salt
• 1/2 cup butter or margarine
• 3/4 cup evaporated milk
• 1 (9 inch) unbaked pastry shell
Procedure
1. In a large mixing bowl, combine the flour and sugar. Add potatoes, eggs, corn syrup, nutmeg, salt, butter and evaporated milk; beat well. Pour into pastry shell. Bake at 350 degrees F for 55-60 minutes.

Besides simple starches, sweet potatoes are rich in complex
carbohydrates, dietary fiber, beta carotene (a vitamin A
equivalent nutrient), vitamin C, and vitamin B6. Pink and yellow
varieties are high in carotene, the precursor of vitamin A.
In 1992, the Center for Science in the Public Interest compared
the nutritional value of sweet potatoes to other vegetables.
Considering fibre content, complex carbohydrates, protein,
vitamins A and C, iron, and calcium, the sweet potato ranked
highest in nutritional value. According to these criteria, sweet
potatoes earned 184 points, 100 points over the next on the
