Grilling Steaks the Salsa Way
Theres nothing like grilling steak on the grill and adding your favorite salsa on top; to simmer away at the final flip of the steaks. Just about any type of salsa can be used to top meat on the grill. One of my favorite salsa's to top a steak is "mushroom salsa." Just take a look at the photo above. Don't it just make your mouth water? If you like tomatoes and mushrooms then your going to love this on top of your steak. Below you will find our recipe for mushroom salsa. Give it a try or make up your own recipe. You can't go wrong.
Just remember... In Spanish or Italian, salsa can refer to any type of sauce, but in American English it usually refers to the spicy, often tomato or corn based hot sauces. We went with the American meaning on salsa with this one because we make our mushroom salsa with tomatoes and jalapeno chile peppers.
Note: If you don't like hot peppers then leave it out. I promise you it will taste just as good. But if you can stand to try just a little bit of jalapeno, we would suggest that you do. This recipe is a "sweet" "heat" recipe. Slightly sweet from the BBQ sauce, sweet vidalia onions and slightly heated from the 1 jalapeno pepper. It makes for a good mix.
Chunky BBQ Mushroom Salsa for Grilling
10 roma (plum) tomatoes diced
1 large 15 oz. can of mushrooms
4 spring onions / green onion - diced
1 small sweet vidalia onion diced (optional)
1 jalapeno chile pepper (more if you like it hotter)
1 teaspoon ground cumin
3 tablespoons chopped fresh cilantro
3 tablespoons fresh lemon juice
3 tablespoons BBQ sauce
3 tablespoons olive oil
3 cloves diced garlic
1/4 teaspoon pepper
1/4 teaspoon salt
2 tablespoons melted butter only if salsa is going over meat on a hot grill.
Omit if you are using this salsa as a cold dip.
Note: This salsa can be pre boiled for 5 minutes before spooning over meat on grill or you can use it the natural and chunky way and just pile it on. Remember... only spoon over meat after the last flip of the meat.

Roasted BBQ Mushroom Salsa for Grilling
10 roma (plum) tomatoes diced or 2 cans of fire roasted tomatoes in 15oz cans.
1 large 15 oz. can of mushrooms. (mushrooms in butter is fine)
4 spring onions / green onion - diced
1 small sweet vidalia onion diced (optional)
1 jalapeno chile pepper (more if you like it hotter)
1 teaspoon ground cumin
3 tablespoons chopped fresh cilantro
3 tablespoons fresh lemon juice
3 tablespoons BBQ sauce
3 tablespoons olive oil
3 cloves diced garlic
1/4 teaspoon pepper
1/4 teaspoon salt
Place roma tomatoes, vadilia onion and jalapeno peppers on grill. Drizzle with olive oil and let char. Remove from heat and chop, discarding tomato cores and jalapeno stems. You can cheat by using 2 cans of fire roasted diced tomatoes instead.
If your using a broiler instead of the grill: Preheat the broiler.
In a medium flat baking dish, place roma (plum) tomatoes, garlic, vadalia onion and jalapeno chile pepper. Drizzle with olive oil.
Broil 5 to 10 minutes, or until outsides of vegetables are charred.
Remove vegetables from heat. Discard tomato cores, jalapeno stem.
In a food processor, coarsely chop the charred vegetables. Transfer to a medium bowl and mix in cumin, salt, lime juice and cilantro.

Simple Mushroom Salsa for Grilling
10 roma (plum) tomatoes diced
4 spring onions / green onion - diced
1 large 8 oz. can of mushrooms
1 tablespoon garlic powder
1 1/2 tablespoons olive oil
3 tablespoons fresh lemon juice
1/4 teaspoon pepper
1/4 teaspoon salt
Just chop, mix and spoon on cold.
This simple chunky salsa is a nice refreshing vegetable mix.

Mushrooms
Yes it is perfectly fine to use fresh button mushrooms if you like but if you do you will have to slice and cook down your mushrooms in water, olive oil, salt, pepper, splash of wine and a bit of butter all before you mix the rest of the ingredients in. My goodiness mushrooms cooked like this is just fantastic by itself over steaks!
