Gone-ta-pott's Grilled Caramelized Carrots
Most people dont think about carrots on the grill but Caramelized carrots are wonderful with a grill flavor. Here's our recipe for grilled carrots and onions that you see in the picture above.
1.) Wipe whole carrots and sweet whole onion with olive oil.
2.) Grill whole carrots and onions until stripped with grill marks.
3.) Chop and finish cooking on the grill but in a cast-iron skillet with wine, butter, salt and pepper. Amount can very.
10 large carrots
1 medium size sweet onion (vidalia)
1/2 cup of red wine of your choice
1/2 stick of butter
salt & pepper to taste
Stir veggies to rotate in liquid. Cook veggies until caramelized and soft. This happens once all the liquid goes away.

Grilled Chicken
This grill chicken in photo is dusted with lime pepper seasoning. Lime pepper has a refreshing taste and the bold black pepper is perfect for chicken, pork, seafood and especially fish. This seasoning is even used to make dips and used on the rim of "Bloody Mary" coctails too.

Our Favorite Baked Potatoes
We are forever adding foil wrapped potatoes to the grill as the meat cooks.
We wash the potato and drizzle with olive oil.
We then grind lots of fresh salt on top before we wrap the foil up.
Make sure you put the potatoes on the grill first because they will take the longest to cook. They take longer than the meats in most cases.

Gone-ta-pott's Lime Pepper Dipping Sauce
Lime Pepper dipping sause is so easy to make.
Just add 1 tablespoon of lime pepper to:
1/4 cup of mayonaise
1/4 cup of sour cream
1/4 cup plain yogart
1/4 cup of chicken stock
salt & pepper to taste
Here's a tip for you: Try this as a basting sauce on the grill too!
We do it all the time. You can adjust how thick or thin you want it by how much chicken stock you use. We like it best on chicken and fish.
Note: Lemon Pepper is just as good as Lime Pepper.
Variations
- If we are using this sauce for "grilled pork" we like to add 4 tablespoons of catchup to the mix.
- If we are using this sauce for "grilled beef" we like to add 4 tablespoons of our favorite BBQ sauce to the mix.
You must cover and refrigerate.

We Love To Grill!
The hubby and I love to grill. We do it at least once a week and that's usually on our off day. We really look forward to it because we both love that chared flavor of food and we are both crazy about barbecue sauce too.
