Christmas Cheese Ball
1 pkg dried beef
1 pkg cream cheese
bunch of green onions
cayenne pepper to taste
chopped pecans, very fine
Chop dried beef very fine, chop green onions using 2/3 of greens very fine. Mix these two with softened cream cheese. Divide in two and roll into balls. Roll balls in chopped pecans. Serve with variety of crackers.

Ranch Cheese Ball
2 (8 ounce) packages cream cheese, softened
3 1/2 cups shredded sharp Cheddar cheese
1 (1 ounce) package Ranch-style dressing mix
2 cups chopped pecans
4 pecan halves
1. In a large bowl, mix together cream cheese, Cheddar cheese, and dressing mix. Form into one large ball or two smaller balls. Roll in chopped pecans to coat surface. Decorate the top with pecan halves. Refrigerate for at least 2 hours, or overnight.

Bacon Cheddar Cheese Ball
16 ounces cream cheese, softened
1/2 pound grated sharp cheddar cheese
1/2 cup chopped green onions
6 slices bacon, cooked and crumbled
1 Clove garlic, minced
3 tablespoons pimiento, minced
3 tablespoons minced fresh parsley
Combine all ingredients, mixing well. Form into a ball; cover with plastic film. Refrigerate overnight to allow flavors to blend. Serves eight.

Green Olive Cheeseball
2 (8 oz.) pkg. cream cheese, softened
1 tsp. lemon juice
Dash of salt
Dash of garlic powder
1 med. onion, chopped fine
1 pkg. Buddig corned beef, cut in sm. pieces
1 lg. jar green olives (to cover and add to mixture)
1 tsp. Worcestershire sauce
Cut up in small pieces about 1/4 of olives from jar. Mix cut olives and other ingredients, add garlic powder to taste. Slice remaining olives in 2 to 3 sections. Form into cheeseball and cover entire cheeseball with olives.

Mustard Cheeseball
8 oz. cream cheese
3/4 c. grated sharp Cheddar cheese
1/2 tsp. ground garlic
2 to 4 oz. English, herb or another choice mustard
Incorporate all together and rill in toasted pecans, walnuts, fresh parsley or another choice of your favorite.

Pineapple Cheeseball
2 pkgs. (8 oz.) cream cheese
1 (8 oz.) can crushed pineapple
1/4 c. chopped onion
1 sm. green pepper, chopped
1 sparse tbsp. seasoned salt
2 c. chopped pecans
Soften cream cheese at room temperature. Add pineapple, green pepper, onion, seasoned salt and 1 cup of pecans. Mix thoroughly and chill. Then roll the cheeseball in remainder of pecans. (Cheeseball can be frozen.)

Seafood Cheese Ball
2 lbs. cream cheese
1 1/2 lb. shrimp or crab (you can use fresh or can)
1/2 c. diced celery
1 tsp. onion powder
1/2 tsp. garlic powder
2 tbsp. dill weed
1/4 tsp. basil
1/4 tsp. horseradish (may need a bit more than called for)
1 tsp. seasoning salt
1/4 tsp. celery seed
2 tsp. lemon juice
Have cream cheese at room temperature. Drain excess liquid from seafood. Cut or break crab into pieces. Mix all ingredients and refrigerate overnight. Adjust seasoning the next day, if needed. Form into cheeseball.

Make it Easy Cheeseballs
2 (8 oz.) pkgs. cream cheese
1 1/2 tsp. garlic powder/salt
1 1/2 tsp. Worcestershire sauce
6 to 8 green onions, chopped
2 pkgs. dried beef
Salt & pepper to taste
Let cream cheese soften, then mix cream cheese, garlic powder/salt, Worcestershire sauce, chopped green onions, and salt and pepper together. Take package of dried beef and slice into small pieces. Add half of beef to cheese mixture. Form cheese mixture into ball. Spread remaining beef out and roll ball over beef, so that beef sticks to ball, and is covered. Chill for about 1 hour and serve with wheat thins or crackers. Enjoy!

Beer Cheeseball
2 (8 oz.) pkgs. cream cheese, softened
1/3 c. beer
2 tbsp. parsley
1 sm. pkg. nuts
1 tsp. paprika
3 c. (12 oz.) sharp cheddar cheese
Blend together the cream cheese, beer, parsley, and paprika until smooth. Stir in cheddar cheese. Cover and chill one hour or more before serving. Divide mixture into balls and cover with chopped nuts.

Coconut Cherry Cheese Balls
1 (8 oz.) pkg. cream cheese, softened
3 tbsp. whole cranberry sauce (well drained)
1/2 tsp. grated orange rind
1/8 tsp. salt
Flake coconut
Combine all ingredients. Chill slightly. Shape into one big ball or shape into bite size balls. Roll into flaked coconut. Makes about 22 balls.

3 (8 oz.) pkgs. cream cheese, room temp.
3/4 c. Cheddar cheese
2 tbsp. mayonnaise
2 tbsp. powdered sugar
1/2 to 1 c. finely chopped nuts
Nutmeg and cinnamon to taste
Coconut
Mix all ingredients together except coconut. Roll into ball. Refrigerate until firm. Then roll in coconut.

1 (8 oz.) cream cheese, softened
1 pkg. Buddig chipped beef, chopped
1 bunch green onions, chopped
1 pinch garlic salt
Mix all ingredients together; form into ball and serve.

Blue Cheese Crumble Cheeseball
2 c. shredded sharp cheese
8 oz. cream cheese
4 oz. Bleu cheese, crumbled
1/4 c. butter
1 clove garlic, crushed or (garlic powder)
Pecans, chopped
Mix together all ingredients except pecans. Put mixture on a piece of wax paper and using the paper shape into a ball. Refrigerate until firm. Cover with chopped pecans.

Ham Cheeseballs
1 sm. can ham (Hormel's chunk ham)
8 oz. pkg. cream cheese, softened
1 tbsp. finely chopped onion
1 tbsp. chopped parsley
Mayonnaise or salad dressing to moisten
Break up ham with a fork (don't use blender or mixer). Add rest of ingredients, just enough mayonnaise to hold it together. Shape into ball and roll in finely chopped walnuts. Chill. Really good with crackers and chips.

Bacon Bit Cheese Ball
2 pkgs. (lg.) cream cheese
1 cup of shredded sharp cheese
1 pkg. Ranch House dressing
Bacon bits: mix 2 tablespoons in cheese and mix.
Form ball. Roll in bacon bits. Serve with crackers.

Sausage Cheeseballs
ok this is not a serve cold cheeseball.
These are mini cheeseball biscuits that are very popular at Christmas
or for any fun party. You use to be able to find this recipe on the back of a bisquick box.
2 1/2 c. biscuit mix
2 c. Cheddar cheese, grated
1 lb. sausage meat (hot or sweet depending on taste) or ground pork
Mix all ingredients well. Shape into 1 inch balls and bake at 350 degrees for about 20 minutes.
Another Version:
Sausage Cheese Balls
1 lb. hot sausage
3 c. Bisquick
1 lb. Velveeta cheese, melted
Mix all together with hands until smooth. Form into bite size balls. Place on cookie sheet and bake in a 325 degree oven for 20 to 30 minutes.
Note: Can be frozen after baked.

Herbed Cheese Ball
2 (8 oz.) cream cheese, room temperature
2 tbsp. minced chives
2 tbsp. minced scallion
2 garlic cloves, minced
1/4 tsp. salt
1/8 tsp. pepper
1 c. chopped parsley
In a medium bowl cream the cheese until light and fluffy. Add next 5 ingredients. Stir until blended. Spread parsley on a plate spoon the cheese into a mound on top of the parsley. With hands roll into a ball. Refrigerate at least 2 hours before serving.
